Following is a list of some great egg breakfast recipes.

Scrambled Egg Casserole
Scrambled Egg Casserole When you’re planning a brunch, consider this do-ahead recipe.

The recipe calls for ham, but substitute 1 cup cooked crumbled sausage if you like.

Let’s get started I am telling this is really great tasting and filling.


½ cup butter or margarine, divided 2 tablespoons all-purpose flour.

½ teaspoon salt

1/8 teaspoon pepper

2 cups milk

1 cup (4 ounces) shredded process American cheese

1 cup cubed fully cooked ham

¼ cup sliced green onions

12 eggs, beaten

1 can (4 ounces) mushroom stems and pieces, drained

1-1/2 cups soft bread crumbs

Additional sliced green onions, optional


In a medium saucepan, melt 2 tablespoons butter. Add flour, salt and pepper;

Cook and stir until mixture begins to bubble. Gradually stir in milk;

Cook until thickened and bubbly, stirring constantly.

Remove from the heat. Add cheese; mix well and set aside.

In a large skillet, sauté ham and onions in 3 tablespoons butter until onions are tender. Add eggs.

Cook over medium heat, stirring occasionally, until eggs began to set.

Add the mushrooms and cheese sauce; mix well.

Pour into a greased 11-in. x 7-in. x2-in. baking dish. Melt remaining butter; toss with breads crumbs.

Sprinkle over top of casserole. Cover and refrigerate for 2-3 hours or overnight.

Remove from the refrigerator 30 minutes before baking.

Bake, uncovered, at 350 degrees for 25-30 minutes or until top is golden brown.

Sprinkle with onions if desired.

Breakfast Burritos
Breakfast Burritos If desired, the burritos can be filled, folded and refrigerated several hours before serving-but be sure to add another 10 to 15 minutes to the baking time.


1 package (16 ounces) frozen Southern-style hash brown potatoes 12 eggs

1 large onion, chopped

1 medium green pepper, chopped

½ pound bulk pork sausage, browned and drained

12 flour tortillas (10 inches) 3 cups (12 ounces) shredded cheddar cheese

Salsa, optional


In a large skillet, fry hash browns according to package directions; Remove and set aside.

In a large bowl, beat eggs; add onion and green pepper.

Pour into the same skillet; cook over medium heat, stirring occasionally, until eggs are set.

Remove from heat. Add hash brown and sausage; mix gently.

Place about ¾ cup of filling on each tortilla; top with ¼ cup cheese.

Roll up and place on a greased baking sheet.

Bake uncovered, at 350 degrees for 15-20 minutes or until heated through.

Serve with salsa if desired.
