Salsa Fresca Recipe

Cumin, chili powder, and cayenne are three commonly used spices in Mexican and Latin American cooking.

Combining them with fresh lime juice and cilantro makes this a classic Salsa Fresca.


2 cups tomatoes, chopped small

¼ cup red onion, minced

2 tablespoon fresh cilantro, minced

1 tablespoon freshly squeezed lime juice

½ teaspoon garlic, minced

¼ teaspoon salt

¼ teaspoons freshly ground black pepper

½ teaspoon chili powder

½ teaspoon cumin

Pinch cayenne (optional)


Place tomatoes, onion, cilantro, lime juice, garlic, salt, pepper, chili, powder, cumin, and cayenne (if using) in a medium mixing bowl, and stir well.

Allow to sit 20 minutes before adjusting the flavor, especially garlic and cayenne.

Serve with Spicy Nachos, as a dip with flax crackers, or as a pizza topping.

Prep time 20 minutes

Avocado Corn Salsa Recipe

Avocado Corn Salsa Recipe Halfway between a salsa and a guacamole, this recipe is a nice twist for corn lovers.


1 ½ cups avocado, cut into ¼ in. cubes

1 cup fresh corn

1 ½ teaspoon ground cumin

1 ½ teaspoon chili powder

¼ teaspoon cayenne (optional)

1 clove garlic, minced

2 tablespoon freshly squeezed lime juice

2 tablespoon fresh cilantro, minced

¼ cup red onion, diced

¼ teaspoon salt


Place avocado, corn, cumin, chili powder, cayenne (if using), garlic, lime juice, cilantro, onion, and salt in a mixing bowl, and toss gently.

Serve immediately stop a salad of mesclum greens or stuff in vegetables such as mushrooms or zucchini or leafy greens such as baby romaine and endive.

Or use as a substitute for Salsa Fresca in Rainbow Chard Burritos and Mexican Pizza.

Store in an airtight container, preferably glass, in the refrigerator for up to 2 days.

Variation: For Papaya Pine Nut Salsa, replace avocado with papaya and replace corn with ½ cup pine nuts.

For Pineapple Macadamia Nut Salsa, replace avocado with pineapple and replace corn with ½ cup macadamia nuts, chopped small.

Papaya Tomato Salsa Recipe

Papaya Tomato Salsa Recipe The deep, subtle flavor of papaya makes great ingredients in this salsa.


¼ cup tomato, chopped small

1 cup papaya (any variety), cubed

4 teaspoon freshly squeezed lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

¼ teaspoon cayenne

¼ teaspoon salt or to taste

1 table fresh cilantro, minced


Place tomato, papaya, lime juice, chili powder, cumin, cayenne, salt, and cilantro in a medium mixing bowl, and stir well.

Serve as chutney with Indian Spice Samosas, with flax crackers, or with Spicy Nachos.

Prep time 15 minutes
