Golden Baked Whitefish Recipe

Using light or fat-free mayonnaise helps reduce fat gram.
Ingredients;
2 pounds whitefish fillets
1/8 teaspoon pepper
1 egg white
½ teaspoon salt
¼ cup light or fat-free mayonnaise
¼ teaspoon dill weed
½ teaspoon onion juice or 1 teaspoon grated onion
Fresh dill and lemon wedges, optional
Directions;
Place fish in a greased 13-in. x 2-in. baking dish; sprinkle with pepper.
Beat egg white with salt until stiff peaks form.
Fold in mayonnaise, dill and onion juice; spoon over fish.
Bake, uncovered, at 425◦ for 15-20 minutes or until topping is puffed and fish flakes easily with a fork.
Garnish with dill and lemon if desired.
Serving Size about 8
Lime Broiled Catfish Recipe
Lime gives fish a wonderful citrus flavor.
Try it as a change of pace from lemon.
Ingredients;
1 tablespoon butter or margarine
2 tablespoon lime juice
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
2 catfish fillets (6 ounces each)
Lime slices or wedges, optional
Fresh parsley, optional
Directions;
Melt butter in a saucepan. Stir in lime juice, salt, pepper and garlic powder; mix well.
Remove from the heat and set aside.
Place fillets on greased broiler pan.
Brush each fillet generously with butter sauce.
Broil for 5-8 minutes or until fish flakes easily with a fork.
Remove to a warm serving dish; spoon pan juices over each fillet.
Garnish with lime and parsley if desired.

Golden Catfish Fillets Recipe
Most folks love catfish with a crispy breaded coating.
This breading is especially nice because the cayenne balances the bold flavor of catfish.
Ingredients;
1 egg white
1 cup milk
1 cup cornmeal
¾ teaspoon salt
¼ teaspoon garlic powder
¼ to ½ teaspoon cayenne pepper
1/8 teaspoon pepper
4 catfish fillets (8 ounces each)
Vegetable oil
Lemon or lime wedges, optional
Directions;
In a shallow bowl, beat the egg white until foamy; add milk and mix well.
In another shallow bowl, combine the cornmeal, salt, garlic powder, cayenne and pepper.
Dip fillets in milk mixture, then coat with cornmeal mixture.
Heat 1/4 in. of oil in a large skillet; fry fish over medium-high heat for 3-4 minutes on each side or until it flakes easily with a fork.
Garnish with lemon or lime if desired.
