Corn Ball Recipe

Place these stuffing balls in the oven along with your roast 15 to 20 minutes before it’s done.

While the Corn Balls continue to bake, make the gravy and slice the roast.


½ cup butter or margarine

1 cup chopped celery

½ cup chopped onion

3-1/2 cups herb-seasoned stuffing croutons

3 cups fresh, frozen or canned whole kernel corn

3 eggs, beaten

½ cup water

½ teaspoon salt

¼ teaspoon pepper


In a saucepan, melt butter. Sauté celery and onion until tender; set aside to cool.

In a bowl, combine croutons, corn, eggs, water, salt, pepper and onion mixture;

mix well.

Shape into eight to 10 balls. Place in an ungreased shallow baking dish.

Bake, uncovered, at 375◦ for 25-30 minutes.

Serving Sizes about 8-10.

Freezer Sweet Corn Recipe
If the end of summer finds you with lots of sweet corn, why not take a little and freeze it to enjoy all winter long?


4 quarts fresh-cut sweet corn kernels (32 ears)

1 quart hot water

2/3 cup sugar

½ cup butter or margarine

2 teaspoons salt


Combine all ingredients in a large kettle; simmer for 5-7 minutes, stirring occasionally.

Pour into large shallow containers to cool; stir occasionally.

Spoon into freezer bags or containers; freeze.

To serve, reheat as you would any commercially frozen kernel corn.

Serving Size about 3 quarts

6 ears fresh corn on the cob

6 tablespoons butter or margarine

6 ice cubes

Salt and pepper to taste

Additional butter or margarine, optional


Place each ear of husked corn on a piece of heavy-duty aluminum foil.

Add 1 tablespoon butter and 1 ice cube.

Wrap securely, twisting ends to make handles for turning.

Grill over hot heat for 25 minutes, turning three times.

Season with salt and pepper and additional butter if desired.

Cream Style Corn Recipe

18 cups fresh-cut sweet corn kernels (36 ears)

2 cups milk

½ cup butter or margarine

1/3 cup sugar

1 tablespoon salt


Place half of the corn in a food processor; cover and process until creamy.

Pour into large baking pan; add milk, butter, sugar, salt and remaining corn.

Cover and bake 325◦ for 1 hour and 30 minutes, stirring frequently.

Serving Size about 2 quarts
