Broccoli Mushroom Medley Recipe
When a speedy side dish’s in order, turn to this simple stir-fry.


1-1/2 pounds fresh broccoli, cut into florets

1 teaspoon lemon juice

1 teaspoon salt

1 teaspoon sugar

1 teaspoon cornstarch

¼ teaspoon ground nutmeg

3 tablespoons vegetable oil

1 cup sliced fresh mushrooms

1 medium onion, sliced into rings

1 to 2 garlic cloves, minced


Place broccoli in a basket over 1 in. of boiling water in a saucepan.

Cover; steam for 5-8 minutes or until crisp-tender.

Rinse in cold water; drain and set aside.

In a bowl, combine lemon juice, salt, sugar, cornstarch and nutmeg; set aside.

In a large skillet or work, heat oil over high.

Stir-fry mushrooms, onion and garlic for 3 minutes.

Add broccoli and lemon juice mixture; stir-fry for 10-2 minutes or until broccoli is crisp-tender.

Serve Immediately.

Broccoli Bake Recipe
Broccoli Bake Recipe For showers, parties or any other family event, this casserole is sure to be a hit.

After Easter, it’s a great way to use leftover hard-cooked eggs.


2 packages (10 ounces each) frozen cut broccoli

1 tablespoon butter or margarine

½ cup chopped onion

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

½ teaspoon ground mustard

½ teaspoon salt

4 hard-cooked eggs, chopped

1-1/2 cups (6 ounces) shredded cheddar cheese

1 can (2.8 ounces) French-fried onions


Cook broccoli according to package directions; drain and set aside.

In a skillet or saucepan, melt butter. Sauté onion until tender. Stir in soup, mustard and salt; heat until bubbly.

Place half of the broccoli in a greased 1-1/2-qt. baking dish; top with half of the eggs, cheese and mushroom sauce.

Repeat layers.

Bake, uncovered, at 350◦ for 20 minutes.

Sprinkle onions on top and bake 5 minutes longer.

2 tablespoons butter or margarine

1-1/2 teaspoons lemon juice

1-1/2 teaspoons finely chopped onion

¼ teaspoon salt

1/8 teaspoon each dried thyme, marjoram and savory


Place broccoli in a saucepan; add 1 in. of water.

Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender.

Drain broccoli and place in a serving dish; keep warm.

Melt butter; add lemon juice, onion, salt and herbs.

Pour over broccoli; stir to coat.
