Apple-Stuffed Chicken

The dressing and glaze make this recipe festive enough to serve

for a small gathering at Thanksgiving or Christmas.

If desired golden raisins or dried cranberries or currants can be

substituted for the raisins.



Apple Stuffed Chicken Ingredients;

1 Package (6 ounces) chicken-flavored stuffing mix

1 broiler-fryer chicken (3 to 4 pounds )

½ teaspoon salt

¼ teaspoon pepper

1 tablespoon vegetable oil

1 cup chopped peeled tart apple

¼ cup chopped celery

¼ cup chopped walnuts

¼ cup raisins

½ teaspoon grated lemon peel

GLAZE:

½ Cup apple jelly

1 tablespoon lemon juice

½ teaspoon ground cinnamon

Direction;

Prepare stuffing according to package directions.

Meanwhile, sprinkle inside of chicken with salt and pepper; rub

outside with oil.

In a large bowl, mix stuffing with apple, celery, nuts, raisins

and lemon peel.

Stuff chicken.

Place with breast side up on a rack in a roasting pan.

Bake, uncovered, at 350 degrees for 1 hour. In a saucepan, combine glaze ingredients; simmer for 3 minutes.

Brush over chicken.

Bake 30-45 minutes longer or until juices run clear and a meat

thermometer reads 180 degrees for chicken and 165 degrees for

the stuffing, brushing occasionally with glaze.

Cover and let stand 10 minutes before removing stuffing and carving.

Make gravy from pan drippings.

Serving Size around Four to Six.

Turkey with Corn Bread Stuffing Turkey with Corn Bread Stuffing

Prepare your favorite basic corn bread recipe-or even a corn

bread mix-the day before making this stuffing.

Ingredients;

½ cup butter or margarine

2 cups chopped celery

1 cup chopped onion

6 cups cubed day-old corn bread

2 cups fresh bread crumbs

1 tablespoon rubbed sage

1 tablespoon poultry seasoning

2 eggs, lightly beaten

1 cup chicken broth

1 turkey (10 to 12 pounds)

Melted butter or margarine

Directions;

In a skillet, melt butter.

Sauté celery and onion until tender.

Place in a large bowl with corn bread, crumbs, sage and poultry seasoning.

Combine eggs and chicken broth; add to bread mixture, stirring gently to mix.

Just before baking, stuff turkey. Skewer or fasten openings.

Tie drumsticks together.

Place with breast side up on a rack in a roasting pan.

Brush with melted butter.

Bake at 325 degrees until a meat thermometer reads 180 degrees for the turkey and 165 degrees for the stuffing (roasting time 2 ¾ to 3 hours).

When turkey begins to brown, cover lightly with a tent of an aluminum foil.

Cover and let stand 20 minutes before removing stuffing and carving.

Serving Size Ten to Twelve.






Herbed Rice Stuffing

Herbed Rice Stuffing

For a change of pace, try a rice stuffing for your holiday turkey.

If you’re entertaining a crowd, prepare two different stuffing

recipes, one in the bird and one baked in a casserole, to add

interest to your meal.

Ingredients;

½ pound bulk pork sausage

½ pound ground beef

½ cup chopped onion

2 eggs, lightly beaten

1 tablespoon poultry seasoning

2 tablespoons minced fresh parsley

2 tablespoons minced celery leaves

1 teaspoon salt

1 teaspoon pepper

½ teaspoon garlic powder

4 cups cooked white rice cooled

Directions;

In a large skillet brown sausage, beef and onion; drain.

In a large bowl, combine eggs, poultry seasonings, parsley, celery leaves salt, pepper and garlic powder; mix well.

Add meat mixture and rice.

Transfer to greased 2 ½ - qt. baking dish.

Cover and bake at 325 degrees for 60 minutes.

Uncover and bake 10 minutes longer or until lightly browned.

Serving 8 cups for one 10-12 turkey.
