Ham and Potato Frittata

A frittata is an unfolded omelet that begins cooking on the stove-top and finishes under the broiler.






Ham and Potato Frittata Ingredients;

3 tablespoons butter or margarine, divided

1 pound red potatoes, cooked and sliced

1-1/2 cups thinly sliced fresh mushrooms

1 cup thinly sliced onion

1 sweet red pepper, julienned

2 cups diced fully cooked ham

2 garlic cloves, minced

1 tablespoon olive or vegetable oil

½ cup minced fresh parsley or basil

8 eggs

Salt and Pepper to taste

1-1/2 cups (6 ounces) shredded cheddar or Swiss cheese

Directions;

In a 10-in. cast-iron or other ovenproof skillet, melt 2 tablespoons butter over medium-high heat. Brown potatoes; remove and set aside.

In the same skillet, melt the remaining butter; sauté mushrooms, onion, red pepper, ham and garlic over medium-high heat until vegetables are tender.

Remove and set aside

Wipe skillet clean.

Heat oil over medium-low heat.

Add potatoes, ham/vegetable mixture and parsley.

In a bowl, beat eggs, salt and pepper.

Pour into skillet; cover and cook for 10-15 minutes or until eggs are nearly set.

Preheat boiler; place uncovered skillet 6 in. from the heat for 2 minutes or until eggs are set.

Sprinkle with the cheese and broil until melted. Cut into wedges to serve.

Serving Size around 6.
Hash Brown Quiche Hash Brown Quiche

If you love quiche but want to avoid having to make a pie crust, try this recipe. The convenient crust is made from hash brown potatoes. Serve with a fruit salad for a pretty, no-fuss meal.

Ingredients;

3 cups frozen shredded hash browns, thawed

1/3 cup butter or margarine, melted

1 cup diced fully cooked ham

1 cup (4 ounces) shredded cheddar cheese

¼ cup diced green pepper

2 eggs

½ cup milk

½ teaspoon salt

¼ teaspoon pepper

Directions;

Press hash browns between paper towels to remove excess moisture.

Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Drizzle with butter.

Bake, uncovered, at 425◦ for 25 minutes. Combine the ham, cheese, and green pepper; spoon into crust.

In a small bowl, beat eggs, milk, salt and pepper. Pour over all.

Reduce heat to 350◦; bake, uncovered, for 25-30 minutes or until a knife inserted near the centers comes out clean.

Let stand for 10 minutes before cutting.
