Dill Butter for Asparagus Recipe

It doesn’t matter what method you use to cook the asparagus for this recipe.

But the presentation is prettier if the spears are left whole, so be sure to use a large skillet to accommodate their length.

Ingredients;

½ cup butter or margarine, softened

¼ cup snipped fresh dill

1-1/2 teaspoons lemon juice

Fresh asparagus, trimmed

Directions;

In a small bowl, combine butter, dill and lemon juice; mix until well blended.

Place on a piece of plastic wrap and shape into a log. (If necessary, refrigerate butter until firm enough to shape.)

Refrigerate until firm, at least 1 hour or up to several weeks.

Steam or boil desired amount of asparagus until crisp-tender.

Drain; place on a platter. Slice butter ¼ in. thick and place on asparagus.

Serving Size about 4 pounds.


Oven-Baked Asparagus Recipe
Oven-Baked Asparagus Recipe For real convenience, you can bake this asparagus in a foil packet while roasting your favorite cut of meat.

Simply place the foil packet in the oven about 25 minutes before the end of the meat’s recommended baking time.

Ingredients;

1 pound fresh asparagus, trimmed

2 tablespoons butter or margarine

Salt and pepper to taste

Directions;

Place the asparagus on a large piece of heavy-duty aluminum foil.

Dot with butter.

Bring long edges of foil together and fold over to seal.

Crimp ends tightly; place foil packet on a baking sheet.

Bake at 350◦ for 25-30 minutes or until asparagus is crisp-tender.

Carefully open foil to allow steam to escape.

Season with salt and pepper.

Sesame Asparagus Recipe
Sesame Asparagus Recipe Add a little crunch and a lot of flavor to tender asparagus spears with this sesame sauce.

2 pounds fresh asparagus, trimmed

1 cup boiling water

1 tablespoon cornstarch

¼ cup cold water

¼ cup butter or margarine

3 tablespoons sesame seeds, toasted

Directions;

Place asparagus spears in a large skillet; add ½ in. of water and bring to a boil.

Reduce heat; cover and simmer until crisp-tender, 3-5 minutes.

Remove asparagus and keep warm.

Drain, reserving ½ cup cooking liquid in a small saucepan.

Combine cornstarch and cold water; stir into liquid.

Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer.

Stir in butter until melted.

Spoon over asparagus; sprinkle with sesame seeds and serve immediately.

Serving Size about 6-8.


Sugared Asparagus Recipe

Here’s a different twist to cooking fresh asparagus that is sure to please.

The brown sugar brings out the delicate flavor of the asparagus.

It’s a real winner with ham!

Ingredients;

3 tablespoons butter or margarine

2 tablespoon brown sugar

2 pounds fresh asparagus, trimmed and cut into 2-inch pieces (about 4 cups)

1 cup chicken broth

Directions;

In a skillet over medium-high, heat butter and brown sugar is dissolved.

Add asparagus; sauté for 2 minutes. Stir in chicken broth; bring to a boil.

Reduce heat; cover and simmer for 8-10 minutes or until asparagus is crisp-tender.

Remove asparagus to serving to a serving dish and keep warm.

Cook sauce, uncovered, until reduced by half. Pour over asparagus and serve immediately.
